Another Gill Family Christmas Recipe: Betty Gill’s Peanut Butter Rice Krispy Treats

Frankly, these were not limited to Christmas, but they were certainly available during the Christmas holiday season. And she would have to make them a few times, because they did not last long.

These are not your airy, light, marshmallow version Rice Krispie treats. Nah, the Gill version is chock full of peanut buttery, calorie-laden goodness that puts the Mo Mo Mo with the Ho Ho Ho at Christmas. And how did we know that Santa would return year after year? Because he didn’t just get a plate of cookies and a glass of milk at the Gill house. His plate had a generous square of Betty’s Rice Krispie treats!

RECIPE
One cup sugar heated in a sauce pan with one cup corn syrup. Heat and stir together on low heat until mostly clear. Mix in one and a half cup of peanut butter. Then in a large mixing bowl add 5 cups of Rice Krispies, about one cup at a time.

Then, after thoroughly blended press into a large casserole dish, with PAM or butter lightly applied to the bottom to prevent sticking, that should be about an inch and a half deep. (9×9 or 9×13).

Cut into squares while warm and stand back because they won’t last long either.
